I would try and split the previous stitch for a more professional finish. If you come between the stitches, it separates the stitches and the fabric could show and doesn’t look as smooth.
It is okay to overlap or split a stitch to the side, it can get make the embroidery more realistic if it is done intentionally, for instance the stitch representing a stray feather.
