The satin stitch is looking great, I have drawn onto your picture where you could add some stitches, where the fabric is slightly showing.
The angle of the stitches looks fine, they maybe a slightly different angle than mine but it’s not noticeable and will not affect the finished look.
There are a few reasons why the stitch could be catching when you’re trying to take it out.
You could be pulling on the wrong stitch, this can happen if you added a stitch and forgot so are pulling on the wrong stitch or you are by mistake pulling two stitches at the same time.
Use the eye of the needle to take a stitch out, rather than the point, as the point can go through the thread and catch it.
You are good to continue on with the long and short stitch down the section,
