Yes when you become more experienced with stitching long and short stitch you do not have to keep the stitches so even, you can be more random with the stitching.
For teaching/learning purposes I like you to first to get the technique learnt but when you have the confidence you can go ahead and become more artistic with your stitching. If you are following a photograph of an animal or bird you will see if they have any stray hairs or feathers that stick out further and you will do the same thing with your stitching for a even more natural look.
I think when you have finished this project you will be more confident in your long and short stitch and on your next project you can most definitely do more staggering of your stitches.
You may not want to do this so much with flowers and leaves as they have a smooth and even look.
